In this interview, Edward C. Steele discusses his personal history and observations of the New York State food processing industry. Topics include: his education at Georgetown University and early sales experiences; the role of the Cudahy family in the Red Wing Company; the development of the continuous screw press for grapes; the acquisition of the American Preserve Company by Red Wing; problems in acquiring tomatoes and grapes in New York State; competition in jams, jellies, and catchup; and changes in jam and jelly processing and in the system used to purchase containers.
